Bombay Grilled Vegetable Sandwich
Bombay grilled vegetable sandwich is a popular street food from Mumbai, formerly known as Bombay. Spicy green chutney and potato onion cucumber tomato are used to make this delicious Bombay vegetable sandwich. The sandwich is then grilled.
Bombay is known for its street food and the chaats are to die for. Besides chaats, these sandwiches and equally popular and sold at most of the street side food stall. Sandwiches are served either grilled or without grilling.
Sandwich masala that is a mixture of chaat masala, roasted cumin powder and black pepper take the flavor of the sandwich to the next level. I like grilled sandwiches and hence Bombay grilled vegetable sandwich.
Bombay Grilled Sandwich Recipe
Total Time: 20 – 25 minutes
Preparation: 15 minutes
Grilling Time: 2-4 minutes
Yields: 2 sandwiches
- 2 slices of White Sandwich Bread
- 1 ½ – 2 tbsp Butter, at room temperature
- 2 – 3 tsp Bombay Sandwich Spread (check notes)
- 1 small Potato boiled and sliced
- Onion, slices into rings
- Tomato, sliced into rings
- ½ mini Cucumber, sliced
- ⅛ tsp Chaat Masala
- ⅛ tsp roasted Cumin Powder (opt and forgot to use when made the sandwiches today)
- ⅛ tsp Black Pepper Powder
- ⅛ tsp Salt
- Boil potato and cut into thin slices.
- Cut onion into thin slices. Will need 2 – 4 slices depending on the size of the onion. I used a big onion. It is ok to use semi circle onion rings but very important to slice them very thin.
- Cut tomato into thin slices. Will need only 2-4 slices depending on the size of the tomato. I used a big tomato and 1 slice was sufficient.
- Peel and cut cucumber into thin slices. i used slicer to get thin slices.
- Mix together salt, chaat masala, cumin powder and black pepper powder.
- Spread butter on each slice.
- Spread 1 ½ tsp of sandwich chutney on each slice on top of butter. Butter makes it easy to spread the chutney on the bread.
- On one sandwich arrange potato slices.
- Sprinkle pinch of masala powder (chaat masala, cumin powder, black pepper powder and salt).
- Arrange Cucumber and sprinkle a dash of masala powder.
- Than arrange tomato and onion. Sprinkle dash of masala powder.
- Place the other sandwich on the onion with chutney side facing down.
- Assemble the other sandwich in similar fashion with other two bread slices.
- Heat a grill pan or a pan or sandwich grill. I used a cast iron pan. A grill pan or sandwich grill will give nice grill marks on the sandwich..
- Spread some butter on the bread slice facing up.
- When the pan or sandwich maker is heater, place the sandwich with butter side facing down.
- Spread butter on the other side of the sandwich which is now facing up.
- Grill the sandwich on brother sides until light brown. If using a sandwich grill, the grill will turn off once it is done and no need to turn the sandwich around.
- Gill the other sandwich similarly.
- Cut each sandwich in to half; triangle or rectangle or cut into 4 squares as I did and serve with some ketchup.
- Bombay Sandwich Chutney – I used store bought Bombay sandwich. Can use any green chutney; coriander chutney or coriander mint chutney. Grind together coriander and/or mint along with green chilies, a clove and small piece of ginger to make the chutney. Add some lime juice to retain the green color. This coriander mint chutney also goes well this these sandwiches.
- Vegetable – Cooked beetroot slices and green bell peppers also make a good addition to sandwiches.
