I would like to thank Priya for letting me host her a Veggie a Month event. I signed up to host this event late last summer and I wanted to try and share handful of eggplants recipes for this event. Then I did not know I would have to go to India in Feb and I came back only in mid March. I could not share all the recipes I wanted to post here. This event was going to be an excuse to cook more eggplants at home! I was able to contribute only two recipes for the event 🙁 . Anyway, here is the round up.
